Corned Beef & Cabbage and Green Hair?

Everyone celebrates St. Patrick’s Day in their own way. A lot of us (me included) enjoy the traditional corned beef & cabbage. Read history here. My mother, having Irish ancestry, always wore a ridiculous green bow in her hair for the day. Occasionally, I would forget myself and point out that the bow was hideous. She would promptly remind me of her “Irish temper”. I once worked with a lady who dyed her childrens’ hair green for the day. Poor kids! Many of us toast St. Patrick with green beer; and party the day (and night) away. How do you celebrate?


There is a lot to be said for traditions; but sometimes I like to shake things up a little. Whether you are steeped in tradition or dance your own jig, give this not-so-traditional recipe a try.

The Raiders released Justin Fargas into free agency saying he did not pass the physical. Justin said this was not true that he was released over bonus money. Justin interviewed with the Cleveland Browns, Philadelphia Eagles and Kansas City, so far with no takers. Read Story

Sorry to see Justin Fargas leave the Raiders. If you ever watched Justin play, you know he gave 100% to the team and was one of the Raiders standouts. Read about Justin here.

Monday sports reports - Did NASCAR know the "car of tomorrow" could fly?

Sundays Sprint Cup race at Atlanta had a scary moment when #12 Brad Keselowski was bumped by Carl Edwards. In doing so it turned Keselowski's Dodge backwards, sending it airborne and crashing upside down onto the outside retaining wall. Click here to view the video of Keselowski's wild ride. Nascar put "roof flaps" on the cars years ago to stop this from happening. I looked at the video and the roof flaps came up to prevent the car from going airborne, but it did anyway. In 2007 they switched to "The car of tomorrow" with a wing on the rear of the cars instead of a spoiler. With more investigation I found that NASCAR is going to go back to the spoiler instead of the wing probably sometime next month. According to NASCAR, fans never embraced the wing; so the switch back to the spoiler. View article here Did NASCAR know there was a potential danger using the wing? Busy Cooks Need Help

Today's recipe is quick, and easy. It's perfect for anyone who wants to serve a delicious meal; but doesn't have the time for lots of preparation or clean up. Rice-A-Roni® Chicken Casserole with a green salad is a complete meal. Try it the next time you are pressed for time. Rice-A-Roni® Chicken Casserole

1 box low salt chicken flavor Rice-A-Roni®
1 can cream of chicken soup
2 boneless skinless chicken breasts
Chicken broth

Cut chicken breasts into bite size pieces. Fry in 1 to 2 tablespoons canola oil in a non-stick pan until almost done. Remove chicken from frying pan. Prepare Rice-A-Roni® per package directions in the same pan used for frying the chicken. Since you will have oil left in the pan, you can omit the butter/margarine. Replace the water with chicken broth. Once the Rice-A-Roni® is done, return the chicken to the pan. Stir in the cream of chicken soup. Put in casserole dish and bake 20 minutes in 350°preheated oven. Serves 4.

Milking Stool Defense

If you are a big fan of The Big Bang Theory, like me; then you undoubtedly watched last night’s episode in which Dr. Sheldon Cooper found himself in traffic court. Sheldon was found guilty after the somewhat testy Judge Kirby failed to see the merit in his milking stool defense. After insulting Judge Kirby and refusing to apologize, Sheldon was thrown in jail for contempt. From his plaid suit to his indignant “I’m a scientist - I never apologize for the truth”, he was intrinsically Sheldon. I must admit I am a little in love with his wonderful simplistic genius. I am a fan of the show in general; and all it’s ridiculous geeky characters. However, without Dr. Sheldon Cooper played by Jim Parsons it just wouldn’t be the same. NFL - This weekend, 600 NFL personnel including head coaches, general managers and scouts began looking at the college prospects for the NFL draft, April 22nd, 23rd and 24th, at the Scouting Combine in Indianapolis. http://www.nfl.com/combine Even though the talk of the town is Tim Tebow, QB out of Florida State, I was looking at offensive and defensive linemen. I was impressed by a six foot three inch, 315 pound "monster" out of Arizona State, Shaun Lauvao. Shaun's performance at the Combine caught my eye so I did some investigating of his college career.
